Ingredients:

  • 1 ½ cups all-purpose flour, sifted

  • 1 cup granulated sugar

  • 3 large eggs (preferably at room temperature)

  • 1 cup milk (preferably at room temperature)

  • ½ cup vegetable oil

  • 2 teaspoons baking powder

  • 1 teaspoon vanilla extract

For Topping:

  • Ready-made caramel sauce

  • Shredded coconut (optional, for garnish)

Equipment:

  • Approx. 9x13 inch (23x33 cm) baking pan or similar size

  • Electric mixer (handheld or stand mixer)

  • Mixing bowls

Method:

  1. Preheat & Prepare: Preheat your oven to 180°C (350°F). Grease and lightly flour your baking pan to prevent the cake from sticking.

  2. Beat Eggs & Sugar: In a large bowl, beat the eggs and sugar together using an electric mixer on medium-high speed until the mixture is pale, light, and significantly increased in volume (creamy texture), typically 3-5 minutes.

  3. Add Wet Ingredients: Reduce the mixer speed to low and gradually add the vegetable oil, milk, and vanilla extract. Mix until just combined.

  4. Combine Dry Ingredients: In a separate bowl, whisk together the sifted flour and baking powder. Add the dry ingredients to the wet mixture in two or three additions, mixing on low speed (or gently folding with a spatula) only until the flour is incorporated. Be careful not to overmix.

  5. Bake: Pour the batter evenly into the prepared baking pan. Bake in the preheated oven for 30-35 minutes. To check for doneness, insert a toothpick or wooden skewer into the center of the cake; if it comes out clean, the cake is ready.

  6. Cool & Decorate: Let the cake cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely (or you can serve it from the pan). Once cooled, generously pour the caramel sauce over the top. If desired, sprinkle with shredded coconut.

  7. Serve: Slice and serve the cake.
