How to Make Refreshing Doum Drink (Doum Juice)
1 cup crushed or small pieces of Doum (approx. 150-200 grams) - You can find this at spice shops (Attar shops) or large grocery stores, often in sections selling Middle Eastern goods. 1.5 liters water (6 cups) ½ to 1 cup sugar (or to taste) - The amount can be adjusted later.
Wash the Doum: Rinse the Doum pieces thoroughly under cold water to remove any dust or impurities. Soaking (Important Step): Place the washed Doum pieces in a deep bowl or pot. Add the 1.5 liters of water. Cover the container and let it soak for at least 6-8 hours, or preferably overnight, at room temperature (or in the refrigerator if the weather is hot). (Soaking helps soften the Doum and extract its flavor better). Heating and Adding Sugar: After the soaking period, transfer the Doum along with its soaking water to a pot on the stove. Add the sugar (start with a smaller amount, like ¾ cup, you can add more later). Gentle Simmering: Stir the mixture well. Place it over medium heat until it just starts to gently boil. As soon as it begins to boil, reduce the heat to low and let it simmer very gently for only 10-15 minutes. Important Note: Do not let the Doum boil vigorously or for too long, as this can make the drink taste bitter. The goal here is just to dissolve the sugar and extract a bit more flavor. Cooling: Remove the pot from the heat and let the drink cool down completely while covered. Straining: Once the drink is completely cool, strain it using a very fine-mesh sieve or a piece of cheesecloth (or a clean, fine cloth) to remove the Doum pieces and any small sediments. Press down on the Doum solids in the strainer to extract all the liquid. Adjusting Taste and Final Chilling: Taste the drink. If it needs more sugar, you can add a little and stir well until dissolved (you might need to gently warm a small amount of the juice with the extra sugar, then mix it back into the rest). Bottling and Chilling: Pour the strained Doum juice into a clean bottle or pitcher and place it in the refrigerator to chill thoroughly for at least 2 hours before serving.
Serve the Doum drink very cold, adding ice cubes if desired.
The quality of the Doum fruit affects the final taste; try to buy it from a reliable source. It's best to adjust the sugar quantity according to your personal preference. Some people prefer not to boil the Doum at all, relying solely on the long soaking period, then straining and adding sugar dissolved in a little hot water. You can try both methods and choose whichever you prefer.
